I was previously told on here that it wasn't a very time consuming job but this mechanic in this shop says it will be a few hours of work. Is the right? Or is he wanting more per hour?

Depending on the guy, it may take a few hours to remove and replace, plus the amount of bleed time to get all the air out. It may take a few hours but it is the brakes, so you do want it right. It may need a follow up bleed after a few days, a spongy pedal is a sure sign of air in the brake system.
